Ginger-Cantaloupe Soup
Ingredients- Four cups cut-up cantaloupe
- 1 cup orange juice
- 1 tablespoon fresh minced ginger, or 1/2 teaspoon ground ginger
Preparation
- Bring the cantaloupe, orange juice, and ginger to a boil over medium-high heat, in a 2-quart saucepan.
- Reduce heat and simmer 5 minutes.
- In a blender or food processor container fitted with a steel blade, blend mixture until smooth.
- Chill.
