Chicken Skillet Cobbler
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
- 2 (12-ounce) jars fat-free chicken gravy
- 1 (16-ounce) package frozen mixed vegetables
- 1 cup frozen chopped onion or 1 medium onion, chopped
- 1 1/2 cups pancake mix
- 3/4 cup fat-free reduced-sodium chicken or beef broth
Preparation
- Spray a 12-inch nonstick skillet with nonfat cooking spray.
- Saute the chicken in the skillet over high heat until it is cooked through.
- Add the gravy, mixed vegetables, and onion. Stir until well mixed.
- Bring the chicken mixture to a boil, and cook for 2 minutes.
- Combine the pancake mix and broth in a bowl, stirring to make a thick batter.
- Spread the batter over the boiling gravy. Don't worry, the batter will spread to cover the gravy as it cooks.
- Reduce the heat to a low boil.
- Cover the skillet and cook for 5 to 7 minutes, or until the batter is fully cooked.
