Hacked 'n Whacked BLT Salad
Ingredients- 3 cups chopped romaine lettuce
- 6 slices (about 3 ounces) extra-lean turkey bacon
- 2 Roma tomatoes, chopped
- 1 slice light bread (40 to 45 calories with about 2g fiber)
Preparation
1). Toast the bread slice and set it aside to cool and harden.
2). Cook bacon according to package directions, either in a pan with a nonstick spray or in the microwave. once cool enough to handle, chop and set aside.
3). Put lettuce and tomatoes in a large bowl. Top with bacon pieces.
4). Cut bread into bite-sized pieces and put on top of the salad.
This is an inventive recipe, and the salad tastes exactly like a BLT sandwich thanks to the toasted bread. I initially planned to eat only the salad, but found that I was still a hungry girl after I finished. Paired with a low calorie soup, BLT salad will still keep you within the standard (500) calorie range for dinner. You will like this one!
