Be it meatloaf, chicken, or holiday ham, mashed potatoes are a delicious accompaniment to any meal. There are a thousand different ways to prepare it, and no one way is satisfactory to everyone. I prefer the flavor of red potatoes over brown russett potatoes, and they also happen to have about ten fewer calories.
Having never before made mashed potatoes, I was delighted to find a quick and easy recipe from Weight Watchers. Mashed Parsley Potatoes can be found in the Weight Watchers 15-Minute Cookbook.

Mashed Parsley Potatoes
Ingredients- 1 pound unpeeled round red potatoes (small to medium size)
- 2 tablespoons water
- 1/4 cup fat-free milk
- 1 1/2 tablespoons reduced-calorie margarine
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon ground pepper
Preparation
1) Cut potatoes into quarters. I use a vegetable scraper/chopper for this task. Look at all that starch!
2) Place potato and water in a medium-size microwave-safe bowl. Cover tightly with heavy-duty plastic wrap; fold back a small edge of the wrap to allow steam to escape. Microwave at HIGH 9 minutes or until tender, stirring after 4 minutes.
Parsley and butter add incredible flavor to mashed potatoes, and it takes only 14 minutes from start to finish.
