First up, steamed Tilapia.What's not to love about this fresh water fish? Its flavor is versatile and, if treated with love, tilapia will sing a lovely tune at the dinner table. Aside from its lovely voice, tilapia is also low in calories and cost. For this recipe, I will use Aqua Star Tilapia which has a mere 90 calories per fillet.
This is a three-pronged project: (1) prepare the court-bouillon, (2) steam the tilapia, and (3) prepare the chive virgin olive oil drizzle.
Part 1: Prepare court-bouillon. I have no idea what court-bouillon is, but google informs me that it is a flavored liquid for poaching or quick- cooking foods.

Court-Bouillon Ingredients |
Court-Bouillon
- 2 cups water
- 6 oz. white wine
- Juice of one lemon
- 1 onion, chopped
- 1 stick celery, chopped
- 2 garlic cloves, chopped
- 1 teaspoon black peppercorns
- 1 teaspoon coriander seeds
- 1 teaspoon salt
- 2 bay leaves
- Parsley
I throw all of the ingredients into a pot and bring them to a boil, then simmer uncovered for ten minutes and strain. This liquid is going into my steamer, Rival 2 Tier.
Note: If you follow these directions, you do so at your own risk. The steamer I own instructs users to fill water reservoir with clean water only: do not put any other liquids or add any salt, pepper, ect. in the water reservoir.
Tilapia
- Court-bouillon (recipe above)
- 1 lb. tilapia fillets
- Lemon juice (as needed)
- Paprika
- Parsley
- Salt & pepper to taste
While the court-bouillon is simmering, I will prepare the fish to be steamed. First, sprinkle the fish with lemon juice and then sprinkle with salt, pepper, and paprika. I am digging this. It's very pretty.

Next, I place the fish in the steamer, add the parsley on top, cover, and steam for 28 minutes or until done. I'm not sure how to tell if it's done, but I will trust the steamer.
