Chocolate Weight Watchers Muffins
Ingredients- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fat-free milk
- 1 large egg
- 4 teaspoons unsalted butter, melted
Preparation
1) Preheat oven to 400° F, and spray a 12-cup muffin tin with nonstick spray. In a large bowl, combine the flour, sugar, baking powder, salt, and cocoa powder.
3) In a small bowl, combine the milk, egg, vanilla extract, and melted butter.
4) Pour the small bowl into the large bowl, and stir until blended. The author says do no overmix in parentheses. Why do authors say such things? Statements like these only serve to make me nervous.
5) Spoon the batter into the cups, filling each about two-thirds full. I leave a little in the bowl to eat with a spoon. It's a tradition, right?
